Energieffektiv produksjon av saltredusert spekemat

Salt has an important function in the production of dry cured products as it affects the drying and maturation process. Unless the existing processes are modified when the salt content is reduced, this can lead to lower product quality, change in consumer behaviour and additional costs. The aim of this study is to develop at energy efficient and sustainable produced of salt reduced dry cured meat. A multidisciplinary approach, where reduction in salt in combination with a new and more energy-efficient drying and maturation process, have been the main focus of the project. Production of cured meats is time consuming. Cooling, drying and maturation make up a significant part of the production costs. Optimization of existing systems for energy as well as implementing of new solutions are central in the project. The use of fossil energy sources is phased out and replaced with environmentally friendly CO2 systems. Further, systems for use of surplus heat in the factory have been developed. As a result, the specific energy consumption (kW used per kg of raw material produced) has been reduced by 20%, and the environmental impact has been reduced by 33%. Salt reductions affect product quality, production time and storage stability. Unless the existing production processes are modified, the production time is expected to increase when the salt content is reduced. Salt and water diffusion in cured ham has been studied through several production trials including different parameters. In addition, innovative non-destructive methods to study salt and water diffusion have been developed. A method for measuring sodium using NaMRi has been optimized and the results show that differences in salt content can be detected using this method. 1H MRi has also been conducted to create a 3D-model of hams that are used in the development of a digital model. The digital model can be used to simulate the production process. Salt affects the fermentation process in dry fermented sausages and thereby the taste of the products. To reduce the impact on product quality, processes adapted to different recipes are necessary. During the project, different recipes with various salt contents have been tested to study consequences related to weight loss, production time and quality. In fermented sausage, the growth of the starter cultures is affected by the salt content, and this affects, among other parameters, the sensory properties. The effect of salt reduction and - replacers on pH and development of degradation products in sausages with different starter cultures have been studied by HPLC and NMR spectroscopy.

Aktivitetene i prosjektet skulle resultere i tre hovedresultat; 1)økt kunnskap om sammenhengen mellom energi, salt og prosessering, 2)økt tilbud av produkter med redusert Na-innhold i norske matbutikker og 3)sterkere markedsposisjon for Grilstad. Oppnådde effekter: Prosjektet har økt Grilstads oppmerksomhet rundt nytten av FoU generelt, samtidig som vi har økt vår kompetanse og kunnskap rundt prosessering, energi og salt spesielt. Virksomheten er tilført ny kunnskap rundt teknologi og det er synliggjort data og løsninger som planlegges videreført og gevinstrealisert. I perioden har vi kommersialisert og lansert nye produkter med lavere Na-innhold i Norge. Prosjektet har bidratt til kunnskaps- og teknologiutvikling som sikrer mer effektiv bruk, gjenbruk og forvaltning av ressurser og mer miljøvennlige og effektive energisystemer. Prosjektet har gjort Grilstads varer og tjenester mer relevante for eksisterende og nye forbrukere, og virksomheten har således styrket sin markedsposisjon.

Reduksjon av salt er en kompleks utfordring for nasjonal og internasjonal spekematbransje. Det er kjent at saltreduksjon påvirker kvalitet, men den påvirker samtidig tørke- og modningsprosessen. Det er derfor viktig å se på utviklingen av saltreduserte produkter i sammenheng med smart prosessteknologi. Kjøling, tørking og klimatisering står for en vesentlig del av produksjonskostnadene og ved reduksjon av salt vil kostnadene knyttet til disse prosessene øke. Kunnskap om kompenserende tiltak for å redusere disse kostnadene, er derfor nødvendig. Forskningsaktivitetene i dette prosjektet vil bidra til å styrke bedriften sin konkurransekraft og miljøprofil gjennom bærekraftig og mest mulig lønnsom produksjon av saltredusert spekemat. Utvikling av nye prosesser som forhindrer økt matsvinn står sentralt. De planlagte aktivitetene vil føre fram til tre hovedresultater som vil komme prosjektgruppen og norske forbrukere til gode: 1. Økt kunnskap om sammenhengen mellom energi, salt og prosessering. 2. Økt tilbud av produkter med redusert saltinnhold i norske matbutikker. 3. Sterkere markedsposisjon
