Seafood4Sure - Seafood sustainable production by safe, ethical and eco-innovative processes

The strategic objectives of Seafood4Sure are: 1. To increase the amount and availability of safe seafood for human consumption. This objective aims at a more efficient and global exploitation of the seafood resource covering processing of waste from fileting (bones, skin, head?) and bycatch processing. Innovative solutions will be developed to obtain edible material (contaminant free in particular). The objective will be achieved by developing (1) hypoallergenic seafood from anisakis-(dead and alive) contaminated material and (2) fish oils and protein hydrolysates from pelagic fish rest raw material that will, if necessary, be decontaminated of MeHg 2. To develop innovative processing solutions of seafood in general. Technological concepts, process and equipment?s will be developed on model seafood; Washing, gelling, development of 3D printing material, drying, innovative high pressure processing concepts, freezing and chemical free decontamination by Negative Air Ions (NAI) combined to chilling. These Technological Concepts and process, transferable to other seafood & foods will help in global valorisation and increase the quality and shelf-life of seafood & food accommodating environmental footprint & gender issues. 3. To explore the market potential of alga. High value alga-based products and ingredients will be developed. 4. To increase the perceived value of seafood. This will cover animal welfare (catch and slaughtering) to enhance quality (reduced stress) and smart/chemical free preservation solution based on biopreservation. Implementation of novel packaging and dedicated traceability methodologies (recognizable labels) will be implemented to help consumers decision of buying. 5. To increase awareness and provide evidence on the sustainability performance of the developed products and processes.
