The aim of the project is to gain increased insight into how raw material composition and various process parameters affect the quality of yoghurt and the shelf life. This project will be carried out to gain increased knowledge and to optimize the yoghurt production. We also want to investigate which quality changes that affect consumer rejection of the product by conducting consumer tests. By doing this, we can potentially optimize the yogurt and increase the shelf life so that the shelf life can both be prolonged and set according to consumers' acceptance of yogurt. Quality data can give us information that can contribute to a reduced amount of food waste by helping us assessing whether the shelf life can be extended and by optimizing production methods and recipes/compositions. The goal is to use quality data for product development in order to increase consumer satisfaction and reduce food waste. The societal challenge we face in achieving the UN's goal of reducing food waste requires an expansion of the quality spectrum of food resources that reach human consumption. The experiments that will be carried out in this project will take place in the pilot plants of Tine and KBM. Emphasis is placed on conducting the experiments on such a scale that the scientific findings can be more easily transferred to a larger scale and industrial production. In this project, we will place emphasis on finding objective measurements that provide information about the quality of yoghurt. Research-based insight is necessary to be able to support work with yoghurt in production, product development and other key functions in TINE SA, such as sales and marketing.

Hensikten med prosjektet er å få økt innsikt i hvordan råvaresammensetning og ulike prosessparametere påvirker kvaliteten på yoghurt og holdbarhetstiden. Dette prosjektet vil derfor gjennomføres for å få økt kunnskap om og optimalisere yoghurtproduksjonen. I dette prosjektet ønsker vi også å undersøke hvilke kvalitetsendringer som påvirker forbrukeravvisning av produktet ved å gjennomføre forbrukertester. Ved å gjøre dette kan vi potensielt optimalisere yoghurten og øke holdbarhetstiden slik at holdbarhetstiden settes i henhold til forbrukernes aksept for yoghurten. Kvalitetsdata kan bidra til redusert mengde matsvinn ved at det kan gjøres vurdering om holdbarhetstiden kan forlenges og ved at produksjonsmetode og resepter kan optimaliseres. Målet er å bruke kvalitetsdata til produktutvikling for å kunne øke forbrukertilfredshet og redusere matsvinn. Den samfunnsmessige utfordringen vi står ovenfor for å nå FNs mål om reduksjon av matavfall krever en utvidelse av kvalitetsspekteret av matressurser som når menneskelig forbruk. Forsøkene som skal gjennomføres i dette prosjektet vil foregå i pilotanleggene til Tine og KBM. Det legges vekt på å gjennomføre forsøkene i en slik skala at de vitenskapelige funnene lettere kan overføres til en større skala og industriell produksjon. I dette prosjektet vil vi legge vekt på å finne relevante objektive målinger som gir informasjon om kvaliteten på yoghurt. Forskningsbasert innsikt er nødvendig for å kunne støtte arbeid med yoghurt i produksjon, produktutvikling og i andre sentrale funksjoner i TINE SA, som eksempelvis salg og marked.
