Residual raw material occurs wherever we refine or process food, and in the fishing industry it is largely about offal and trimmings after gutting and filleting fish. In Norway, we have long traditions of taking care of residual raw material, also on an industrial scale, but very little of the residual raw material from the fishing industry is used for human consumption. According to a report from Sintef/Kontali, only 19% of the residual raw material that occurs in Norway is used for human consumption. In addition, there are the volumes that arise in other countries, after Norwegian fish is exported frozen round or gutted.
Nuas Technology wants to do something about this through the concept Bruk Fisken. We have developed a new technology, which makes it possible to use the whole fish for human consumption. The processing plant that has been built is mobile and can therefore be installed wall to wall with existing fishing industry. With a controllable and closed process, we satisfy the requirements of the Food Safety Authority and can supply oil and protein to the food industry. Nuas Technology is now planning a commercial production and in Sumafood_BCOM we will have the opportunity to prepare this in a comprehensive and good way.
The aim of the project is to prepare the company for the start of commercial production together with selected partners.
Nuas Technology has developed and patended new technology to extract food grade marine ingredients from fish residuals. The technology
consist of an vertical hydrolysis column with gentle stirring. The products from the process are protein, oil and bones. All three ingredients
are suitable for both dietary products and food production.
A global market for ingredients have been growing with 4-5 precent each year the last decade. On top of this, the world population growth
calls for an increased food demand in the future aswell.
The SuMaFood project intends to reduce food waste and increase the productive use of marine biomass by devising innovative methods of
processing and preservation, and developing ingredients that will serve as the basis for new food products.
As a partner in Sumafood, Nuas Technology will now through Sumafood_BCOM prepare for a commercial production of food grade
ingredients from fish residuals based on the experience we have gained in the Sumafood project.
Nuas Technology is ready and able to start and complete this project.
