Improved bone health for osteoporotic women by intake of dietary vitamin D and vitamin K from tailor-made Atlantic salmon

The indigenous Norwegian population has one of the world’s highest incidences of hip fracture, and their bone mineral density (BMD) is lower than comparable populations. Taking into account the expected increasing amount of elderly in the society over the next decades, the percentage of osteoporotic patients will increase during these years unless the prophylactic strategies or clinical treatment become more successful. We know that proper nutrition plays a crucial role in both the prevention and the trea tment of osteoporosis, and in addition to calcium, vitamin D from dietary or supplement sources have historically been the major therapeutic focus. Fatty fish like salmon and halibut is one of the very few natural dietary sources of vitamin D, and recent results demonstrate the possibility of producing Atlantic salmon with increasing levels of vitamin D in the fillet. It has been demonstrated from other studies that nutrients in its natural matrix are more effective than nutrients as pharmaceutical produc ts (Halliwell 2000; Visioli, Keaney et al. 2000), and one example is n-3 fatty acids from fish which are more effectively incorporated into plasma lipids than when administered as capsules ( Visioli, Risé et al. 2003). This project covers three evident goals for the program: •Elderly women after menopause are chosen as the experimental group because they are especially prone to osteoporosis, and because our hypothesis is that increased intake of dietary vitamin D and vitamin K from fish fillet could gi ve them an increased quality of life and reduce the socioeconomic cost of having them in hospital. •Fish is more or less the only natural dietary source of vitamin D, and both vitamin D and vitamin K are examples of nutrients naturally present in fish. •To strengthen the knowledge transfer and to facilitate the implementation of the results from this project to the market, a fish feed company (Nutreco) is included as a project partner.
