On board preservation of the quality of pelagic species

One important challenge to the fishermen is to predict or avoid the catch spoilage associated to the period of heavy feeding on zooplankton ("belly bursting") that can be severe enough to make the catch unsuitable for human consumption, and it is attribut ed to the effect of proteases. Relevant proteolytic enzymes can come from the digestive systems of the fish and of the zooplankton, the intestinal flora and the fish muscle. Preservation of the fish quality and inhibition of the deleterious enzymatic acti vities must commence as soon as possible, preferable prior to death (to use a not stressful harvesting method would be highly desirable), and in any case immediately after harvest and death, i.e., on board the fishing vessels. On the other hand, it is kno wn that native proteins with a stabilized structure are more resistant to proteolytic attack than their denatured counterpart. Protein structure is stabilized by some molecules known as osmolytes, many of which are naturally present in marine organisms. T he long term aim of the proposed research would be to improve the conditions for preservation of herring on board the fishing vessels minimizing the loss of quality and proteolytic degradation of the fish. The specific objectives will be to map (1) the pr oteolytic activities that may be active in post mortem herring during the heavy feeding season and (2) the effect of some selected osmolytes to inhibit the deterioration of herring. This proposal thus targets the objective of the Program "Fiskeriteknologi " that intends to increase the quality of the raw material delivered by the fleet and contribute to increase the value of the existing resources, for example in relationship with improved handling of the catch aiming at new markets or products. Within the project, we apply for a Dr Scient fellowship and we expect that the Dr Scient studium will be fulfilled during the project period.
