Health promoting compounds in barley and oat

The project will focus on barley and oat, both cereals with substantial fibre, antioxidant and oligosaccharide levels. Milling and related processing will be performed under industrial or pilot-plant conditions using state-of-the-art technology with the p urpose of achieving fractions rich in antioxidants and oligosaccharides. Lactic acid fermentation of promising fractions will be performed in semi-industrial scale using bacterial strains previously applied in fermentation experiments at Matforsk. Bio logical activity of antioxidant-rich oat and barley fractions will be studied by analysing levels of free and bound phenolics as the cereals pass through the digestive tract of cannulated pigs. Prebiotic effects of oligosaccharides in fractions from oat a nd barley will be studied using an artifical gut model in cooperation with scientists at Food & Bioprocessing Sciences in Reading. Samples from both milling and fermentation experiments, as well as from the pig and artificial gut experiments, will be a nalysed by methods already established among the partners. The Ph.D. student will work along the value chain and participate in processing, assement on biological activity and analysis of antioxidants and carbohydrates. The industrial partners of the pro ject will test and further develop promising fractions and fermentation products into products with potential health benefits. This will be done in close cooperation with the activities in the project, although direct product development is not included i n the project.
