Reduced risk of Fusarium and mycotoxin contamination in Norwegian cereals by the development of a rapid screening system

Fusarium infection in cereals has become a problem world-wide. Species of Fusarium produce mycotoxins that leave the grains unsuitable for consumption. In the 2004 harvest, alarming levels of the mycotoxin deoxynivalenol (DON) was registered in grain lots of Norwegian grown wheat and oats. This may be the result of an altered composition of Fusarium species, compared to the situation in previous years. The European Commission is currently considering maximum levels of Fusarium mycotoxins for unprocessed c ereals and cereal foodstuffs intended for human consumption. Today there are no routines for measuring mycotoxin content in grains used for food and fodder in Norway. Therefore it is an urgent need to develop a strategy for identification of cereal grain lots with an unacceptable high mycotoxin content to prevent these lots entering the food and feed processing chain. In this project we will develop a three-step screening system for identification of cereal grain lots with an unacceptable high mycotoxin c ontent. 1. Prediction models will be developed for the estimation of the risk for Fusarium infection and mycotoxin development in cereal fields based upon weather data and information about cultivation practice. 2. Grain from ?high-risk? fields will be analysed for Fusarium or mycotoxin content by the use a of suitable and rapid test method especially chosen for its capacity to analyse a large number of cereal samples at low costs. 3. A limited number of grain lots regarded as highly contaminated (afte r step 2), can then be forwarded to chemical analysis of mycotoxins. Thus, the screening system developed during this project will enhance food safety by enabling the elimination of mycotoxin contaminated grain lots. As far as we know this will be the fir st attempt to develop an overall strategy to reveal mycotoxin contaminated grain lots in order to stop such lots from entering the food and feed processing chain.
