Oxidative stress is intimately involved in pathophysiology many chronic degenerative diseases such as cancer, cardiovascular diseases, diabetes, cataract as well as neurodegenerative diseases. Oxidative stress is also central to the theory of aging. We ar e therefore investigating the role of dietary plant based antioxidants in experimental models for oxidative stress-related diseases, and we are testing the effects in population-based epidemiological and clinical studies. We will now measure the content of total antioxidants in foods and drinks available in the Norwegian marked since this information is not available. We will also identify plant foods and phytochemicals that induce antioxidant defence and dampen inflammation, and develop a Norwegian bas ed food table based on these properties.
