Sustainable, competitive and optimised milder processed foods with simpler ingredient lists (SOUP)

The opinions on what food is healthy, sustainable and how the food we eat should be produced are many. Unclear definitions and categorizations, such as "ultra-processed food" (UPM), can contribute to confusion among consumers about what are good choices. The food industry aim for producing healthy and climate-friendly food in line with consumers' expectations, but with rapidly changing frameworks due to uncertainty and limitations in access to raw materials as a result of the climate crisis, war, trade barriers and the energy crisis, it is challenging. Orkla Foods Norway (OFN) wants to be a pioneering company and show, together with our partners, how these challenges can be met. That is why we are starting the project SOUP, where we address issues related to UPM from several angles at the same time. We do this by mapping which processes in food production and which additives should be changed both on an objective basis and to meet consumer attitudes. Unnecessarily heavy processing must be reduced, simplified or changed with more sustainable technology that provides healthier food and lower energy consumption. Efforts must be made to simplify ingredient lists and additives must be removed or changed to healthier alternatives when possible. We will develop new healthy products that are based on Norwegian vegetables and we will introduce regenerative grown grain and vegetables as raw materials for new, healthy products. The results will be useful for both the farmers, the food industry and the research institutions participating in SOUP. More use of locally produced food will also strengthen food safety, reduce the need for transport and develop food products that more consumers friendly. In addition, the knowledge will be published both through research articles and in consumer-friendly forums. We will also share the knowledge with the Norwegian authorities in order to provide them with a better decision-making basis in their work to improve public health.

Meningene spriker om hva slags mat som er sunn, hva som er bærekraftig og hvordan maten vi spiser skal produseres. Uklare definisjoner og kategoriseringer, som f.eks. «ultraprosessert mat» (UPM), kan bidra til forvirring hos forbrukerne om hva som er gode valg. Matvarebransjen ønsker å produsere sunn og klimavennlig mat i tråd med forbrukernes forventninger, men når rammevilkårene raskt endres med usikkerhet og begrensninger i råvaretilgang som følge av klimakrise, krig, handelshindringer og energikrise er det utfordrende. Orkla Foods Norge (OFN) ønsker å være en foregangsbedrift og vise, sammen med våre partnere, hvordan disse utfordringene kan møtes. Derfor starter vi prosjektet SOUP hvor vi angriper problemstillinger knyttet til UPM fra flere vinkler samtidig. Dette gjør vi gjennom å kartlegge hvilke prosesser i matproduksjonen og hvilke tilsetningsstoffer som bør endres både på objektivt grunnlag og for å komme forbrukerholdninger i møte. Unødig kraftig prosessering skal reduseres, forenkles eller endres med mer bærekraftig teknologi som gir sunnere mat og lavere energiforbruk. Det skal arbeides med å forenkle ingredienslister og tilsetningsstoffer skal fjernes eller endres til sunnere alternativer. Vi skal utvikle nye sunne produkter som baserer seg på norske grønnsaker og vi vil introdusere regenerativt dyrket korn og grønnsaker som råvare for nye, sunne produkter. Resultatene vil være nyttige for både bøndene, matindustrien og forskningsmiljøene som deltar i SOUP. Mer bruk av lokalprodusert mat vil også styrke matsikkerheten, redusere transportbehovet og utvikle matvarer flere forbrukere etterspør. I tillegg vil kunnskapen bli publisert både gjennom forskningsartikler og i forbrukervennlige fora. Vi vil også dele kunnskapen til norske myndigheter for å kunne gi dem bedre beslutningsgrunnlag i sitt arbeid for å bedre folkehelsen.
