Novel Antioxidants for Marine Lipids (AMALI)

The goal of the project is to desing, develop new synthetic methods and pathways, and to investigate the properties of the novel antioxidants prepared during the project. A major focal point for the project is to develop and explore phenolic and benzoquin one class of compounds that hopefully will be new antioxidants for preserving purposes of food and feed. Besides the research linked to the synthetic and mechanistic studies, one associated research group will conduct studies on the application of antioxi dants for the food and feed. Results from those studies will continuously be evaluated and used for the improvements of the antioxidant properties by means of QSAR prediction-approach.
