High-value products from low-grade by-products of animal and marine origin: process monitoring of industrial enzymatic protein hydrolysis

The animal and marine industries produce a significant amount of by-products that is either destructed or processed to low-value products. Both animal and marine by-products contain substantial amounts of proteins that only to a small extent is utilised f or high-grade protein products, and this possesses a great economic potential for Norwegian animal and marine industries. The main target of the project is to increase the knowledge-base on enzymatic hydrolysis of animal and marine by-products by the deve lopment of rapid screening techniques for process monitoring of industrial enzymatic protein hydrolysis. The following critical challenges will be sought solved in the project: 1) Development of reaction protocols for enzymatic hydrolysis of chicken by-pr oducts. 2) Development of screening tools to monitor degree of hydrolysis and end-product quality. 3) Development of screening tools for rapid assessment of chemical composition of animal and marine by-products. 4) Optimisation of enzymatic hydrolysis of by-products of animal and marine origin according to raw materials, processing settings and end-product quality. Norilia, Jærkylling and Marine Bioproducts are involved as industry partners in the project. Through this project we hope to facilitate optimi sed industrial enzymatic protein hydrolysis for the animal and marine industries, which in turn will reduce production waste, increase the sales value of by-products, and open new markets for utilisation of animal and marine hydrolysates.
