The interest for research on CO for meat and fish has grown substantially over the past 3-4 years, much because of the recent legislative developments in the USA and EU. Norway and the USA have been pioneers in the utilisation of CO for muscle foods. We p ropose to evaluate new research areas of CO, and hence there is a need for collaborative efforts on finding research directions and focus.
The proposal is a cooperation between Kansas State University (Manhattan - KS), Institute of Marine Research (Berge n) and Matforsk (Ås).
The following tasks will be considered as issues for a future research application:
* The antioxidative properties of CO in lipids and heme pigments
* Binding and release of CO to heme pigments
* Thermal denaturation of carboxymyog lobin
Each of the three tasks will be included in the following activities:
* conduct pre-trials in collaboration with on-going activities by the three applicants
* collect information from other research and external sources
* hold 1-2 workshops in Norw ay and/or the USA for joint discussions of the tasks and planning of a future research proposal.
