Eat The Future – A Workshop with Citizens and Food Industry Actors for a sustainable plant-based diet

The need for a shift towards a more plant-based and sustainable diet is widely recognized. Despite the clear scientific evidence about the advantage of such dietary changes, there are several barriers to change on the production and the consumer side. In addition, there is lack of efficient methods for changing people’s eating habits into this direction. By visualizing and exposing consumers and stakeholders to the desired change and the consequences of not changing our food system, we want to jointly develop innovations and interventions towards a more plant-based and more sustainable Norwegian diet. We want to repeat a very successful approach we first organized in November 2018: An interactive event called “Eat the Future” (ETF) to communicate results of the research project FoodProFuture (NFR BIONÆR 267858). The two additional events are not part of the original project funding and go beyond the project scope but will significantly widen the outreach. Participants will experience and test (with all senses) stories, pictures, and a delicious menu of the future of plant-based protein food in Norway. We want to make people think about and create the ability to engage and experience: A journey through 4 possible futures of food in Norway. The results from our first event show the importance to repeat it and add a slightly diversified format of ETF for the industry including a workshop. As such we can reach a wider audience and jointly develop specific innovation ideas on how to accelerate the shift towards more sustainable plan-based foods produced in Norway. We want to engage citizens and stakeholders (farmers, producers, sellers, policymakers) in the food sustainability discussion. We aim to create visibility, awareness and information on plant-based proteins using scenarios and displaying possible pictures of the future as a new way of communicating science project results
